DIANE'S CORNER ... Celebrate Human Rights Day

Every so often a thing comes to pass that is of such astounding importance that we must stand up and recognize it. We must place this thing on the pedestal it deserves, and ensure that the precepts and policies put in place by it are adhered to, appreciated, and spread as far as the human voice will carry. Such is the sort of message sent by Human Rights Day.
Human Rights Day was established in 1948, and ever since that auspicious day it has stood as the first major stride forward in ensuring that the rights of every human across the globe are protected. From the most basic human needs such as food, shelter, and water, all the way up to access to free and uncensored information, such has been the goals and ambitions laid out that day.
The Universal Declaration of Human Rights (UDHR) was a shout across the world by the leading countries in the world, stating loud and clear that no matter where we live, what we believe, or how we love, we are each individually deserving of the most basic fundamentals of human needs. Every year Human Rights Day marks conferences around the world dedicated to ensuring that these ideals are pursued, and that the basic Human Rights of every person is made a priority in the global theater.

History

Menachem Begin and Anwar Sadat Share Nobel Peace Prize (1978)


In 1978, a historic peace summit was held between Israel and Egypt at the US presidential retreat at Camp David, Maryland. Now known as the Camp David Accords, the pact was signed in 1979 by Begin, the Israeli prime minister, and Sadat, the Egyptian president—who shared the Nobel Peace Prize for their efforts—with US President Jimmy Carter as a witness. Under the pact, which was denounced by other Arab states, Israel agreed to return the Sinai to Egypt.

Melvil Dewey (1851)


In 1876, while working as a college librarian, Dewey developed a decimal-based system for organizing the contents of a library by subject category, indicated by a three-digit numeral, with further specification expressed by numerals following a decimal point. He established the first library training school and the American Library Association and is also credited with inventing the vertical office file.

Thailand Constitution Day


In 1932, Thailand's absolute monarchy was replaced with a constitutional monarchy. King Rama VII oversaw the transfer of power. Under the newly instituted constitution of that time, the monarchy remained in place and the king was designated the head of state. Thailand has had a series of 18 constitutions or charters since 1932, the latest one being adopted in 2007. Each has allowed for a constitutional monarchy with greater or lesser power. Celebrations on Constitution Day involve the people thanking the monarchy for granting them a chance to take part in running the country.

New England Clam Chowder in the Slow Cooker


I feel very lucky that we live pretty close to the coast. If we hopped in the car, we'd see the ocean within 15 minutes --- that's pretty cool. I'm kind of embarrassed that we don't take advantage of this as often as we should.  So I brought the beach to us. No mess, no sandy feet, and no bird poop.

The Ingredients.
serves 6
there's no half-and-half in this picture. I didn't buy it yet!
1/2 pound bacon, cooked and diced
1 (6.5-ounce) can minced clams, drained
5 small red potatoes, peeled and cut into chunks
1 onion, peeled and diced
1 cup sliced celery
2 garlic cloves, chopped
2 teaspoons dried thyme
1 teaspoon kosher salt
1/2 teaspoon black pepper
4 cups chicken broth
2 cups half-and-half (or you could use heavy cream)
1 cup shredded cheddar cheese (to add later)

optional: bread bowls for serving. If you're gluten free, I've made them myself by using boxed bread mix, then plopping 4 round dough blobs on a piece of parchment paper--they bake right up, and are perfect!

The Directions.

Use a 4-quart slow cooker. Brown the bacon on the stovetop, and drain the accumulated grease (I saved bacon from breakfast-- about 6 4 slices (I accidentally ate a few...)
Put the bacon into your crockpot, and add clams. Add all the vegetables and spices and pour in the broth. Cover, and cook on low for 6 to 8 hours, or until the onion is translucent and the potatoes squish easily with a fork.
Use a hand-held stick blender and pulse a few times to naturally thicken the soup. Stir in half and half and shredded cheese. Ladle into wide-mouthed bowls or bread bowls.

The Verdict.

This is an awesome chowder. The canned clams really do a great job of flavoring the broth and the soup, and are terribly inexpensive, and will keep in the pantry for a long time. They're a great canned item to keep on hand. My kids lapped up their servings.

These Paper Stars are great for adults and older children to make and cost next to nothing. In fact, I bet you could buy one package of Post-it Notes, and you’d have one impressive holiday display!

Make 3D Paper Stars from Post-it notes! Materials 

Instructions

  • Step One Make one section of the star. Fold one post-it note diagonally.
  • Step Two Fold diagonally again.
  • Step Three Turn note to the side with the folded edge facing down.
  • Step Four Cut two slits in the note aligned with the long edge. Stop cutting ¼” from the edge.

  • Step Five Unfold
  • Step Six Gently curl inside edges together and glue. Use a crayon to help shape the curl. It will also give you a hard surface to press down on as you glue the edges together.
  • Step Seven Glue the outermost edges together.
  • Step Eight Turn the section over and glue the center edges together in the opposite direction of the other two curls.
  • Step Nine Repeat 5 more time so that you have a total of 6 sections.
  • Step Ten Glue the center point of three sections together and repeat with the other three sections.
  • Step Eleven Finally glue two halves together.

  • Have a pen and marker handy as well to help you shape and glue the larger section edges together.
  • Speed it up! Cut your post-its two at a time!
