Everybody loves a sunny day, but in the height of summer it’s easy to get dehydrated, sunburnt and worse. Stay Out Of The Sun Day is about looking after yourself by taking a day away from the sun and finding some nice, relaxing shade – and if you are out and about, make sure you’ve got sun cream, plenty of water and some shade!

Marshall Islands Fishermen's Day


In the Marshall Islands, Fishermen's Day is a public holiday sponsored by the Marshalls Billfish Club. During the contest, competing fishermen go out into the ocean and attempt to catch the most, the biggest, or the heaviest fish in several categories. In 1981, four friends, Tom Micheals, Wally Milne, Ramsey Reimers, and Ronnie Reimers, founded the Marshalls Billfish Club, and they were inspired to set up an annual tournament in the Marshall Islands every July. The Marshall Islands government endorsed the club, and since then the event has become a national holiday each year.

RECIPE

GRITS AU GRATIN by Julia Child
6-8 servings


2.5 c regular grits [or follow recipe for instant on the package]
10 c cold water
1.5 tsp salt
4 tbsp. butter

1 cup cream or sour cream
3 large eggs
1.5 c grated cheddar cheese, I c into it and .5 on top

Whisk the grits into the water, boil, stirring often with a wooden spoon.  Don’t let it scorch.  Once boiling, add salt, butter and let cook for another 5 minutes or until the grits have thickened.  I like them a little more runny as I put tons of cheddar in there. 
Bring a bit of water to simmer in a larger pan and set the grits pan in it.  Cover and cook 30 minutes or so until they form a sort of thick mass and are tender but not mushy.

Remove from water bath, put over moderate heat.
Beat in the cream and stir for a few minutes to re-thicken.
Remove from heat, beat in the eggs slowly so they don’t cook in lumps.
Stir in I c cheese.
Correct seasoning.  (I always add a bit of this and that.  Some fine herbs, more cheese or butter, bits of ham, whatever)
Put into a buttered baking dish, cover with rest of cheese, sprinkle with paprika so it looks pretty and browns nicely.
Bake at 425 degrees for 45 minutes until hot. 
Serve her up!  Yum yum. 




CROCKPOT RECIPE

I have no idea why I waited so long to make this. It is so terribly easy, and I was able to get 3 very nice-sized plastic containers of sauce, which now live in the freezer. There isn't anything wrong with jarred sauce---I use it quite often, but there isn't much to brag about when you open a jar.

This? This you can brag about. "oh yes. Of course I make my own pasta sauce."

I kept this simple, and did not add a lot of spices, or even onion and garlic. I usually throw in onion and garlic whenever I make something using marinara, anyhow, and prefer the crunch when added freshly. But like a lot of what I do: There are NO rules. Throw in your favorite spices, and customize how you see fit. There are also no rules about the tomatoes. I used what I happened to have in the pantry at the time. Buy what's on sale, and have at it!

The Ingredients.

--1 28 oz can whole peeled tomatoes
--1 15oz can of tomato sauce
--1 12.5 oz Italian flavored diced tomatoes.
--16 oz fresh mushrooms
--1 T Italian seasoning (and a bit more to taste when cooking is done)
--1 lb super lean ground turkey meat

The Directions.

Add the thawed (or fresh) turkey meat to the crockpot. Dump in all the cans of tomatoes, and break the ground meat up with a large spoon. Stir in the spices and mushrooms.

Cover and cook on low for 8-10 hours. 

When done cooking, break up the ground meat a bit more and season to taste. Jarred pasta sauce is awfully salty; I didn't add any salt, but your tongue might desperately want to.

Serve right away, or package for freezing.

The Verdict.

This is very tasty. I shared a bunch with my grandparents, who enjoyed it also. It has been rather warm, so I let this cook overnight on the counter in front of an open window. I'm sure the neighborhood dogs were quite happy!
The kids and I had a small bowl for breakfast. I loved that I didn't need to brown the meat, and that turkey meat is so lean that there was very little fat that floated to the top during cooking. If you decide to use a different type of meat, you can chill the sauce, and scrape off the collected fat.

Former Millionaire Now in Heavy Debt after Adopting 72 Children in the Last 19 Years

By Sumitra Meet Li Li Juan, a former millionaire whose benevolent spirit led her to bankruptcy. The 47-year-old, from northern China’s Hebei Province, has adopted 72 abandoned children over the course of 19 years. She spent all her money caring for them, and is now facing a huge debt of over two million yuan.
Li became rich during the 1980s, earning huge profits from her garments business and her investments in iron ore mining. It was around this time that she started taking in sick and disabled children who were abandoned by their parents, and orphaned children whose parents had died in coal mine disasters. She used her two sources of income to provide for all her adopted children.
It was all smooth sailing for a few years, but as luck would have it, hard times fell upon Li in 2008. Her mine was shut down due to urban developments, cutting down a major source of her income. But she continued to care for the children by selling off all her properties and valuables, one at a time.
