Mushroom, Lemon and Lentil Salad {vegan}

While this may look like a decidedly winter dish, the sharp brightness and freshness of lemon really brings this Mushroom, Lemon and Lentil Salad into summer. It’s a healthy, light and easy salad that is perfect to bring along to your next bbq or summer picnic.
Here I’ve used a mix of portobello mushrooms and button mushrooms, but you can use whatever variety ofmushrooms you prefer. The mushrooms are cooked over a high heat and taken on a slightly caramelised flavour. Just be sure not to add salt to the mushrooms while cooking them as this will cause them to release water and will prevent them from caramelising.
There are plenty of ways to dress up this Mushroom, Lemon & Lentil Salad to make it your own. Why not add some crumbled feta, or even better, fry up some haloumi and place it over the top. Don’t like lentils? Try couscous, quinoa or bulgar wheat. I can attest to the deliciousness of a bulgar wheat version, which I had for lunch the other day, along with some chickpeas added to the mix for a bit of protein.

Mushroom, Lemon and Lentil Salad

Ingredients
- ½ cup French Lentils
- 2 cups water
- 1 tbs olive oil
- 300g mix of button and portobello mushrooms, sliced
- 2 cloves of garlic, finely chopped
- ¼ tsp chili flakes, or more to taste
- 1 tbs lemon juice
- 1 tbs good quality extra virgin olive oil
- sea salt and pepper, to taste
- 2 tbsp flat leaf parsley, roughly chopped
- ½ cup rocket (arugula)
Instructions
- Begin by cooking the lentils. Place the lentils and water in a saucepan and bring to a boil before reducing to a simmer. Simmer for 25 minutes or until the lentils are tender. Drain and set aside to cool.
- Place a large frying pan over a high heat and add 2 tsp of olive oil. When the pan has come to heat add half the mushrooms. Leave for 1 to 2 minutes before stirring. The mushrooms should be lightly golden. Cook for a further minute before removing from the pan and repeating with the second batch. Reduce the heat to medium low and return the mushrooms to the pan and add the garlic and chilli flakes and cook for 2 minutes, or until the garlic is fragrant, but not browned as it will taste bitter. Set aside to cool.
- Toss the lentils, mushroom and garlic together along with the lemon juice and the extra virgin olive oil. Season to taste and add the parsley and rocket just as you're serving.
Notes
Don't slice the mushrooms too thinly. You want them to have a bit of substance and also you don't want them to dry out when they are cooked over a high heat.

How to Turn Fruit & Veggies Into Jewelry

Nature supplies us with an abundant quantity of brightly colored fruits and vegetables. These foods are often replicated in plastics and other materials to create jewelry pieces. Rather than wear plastic replica orange slice earrings, you can actually wear the real things. You can use fruit and vegetable jewelry as a statement about going green, being vegetarian or just enjoying nature's bounty. The process requires several days, from start to finish, and yields a piece that will last a lifetime.
- Thinly slice the fruits and vegetables you'd like to use, and place them into a dehydrator. Dehydrate slowly, on a low setting, for one to three days, depending on size. Dehydrating the pieces too quickly can cause them to pucker, shrivel and wrinkle. Some fruits and vegetables dehydrate better than others, so you may have to experiment with different slices at different settings until you find what's right for you. Remove the slices from the dehydrator when there is no moisture left.
- Choose a resin mold that matches the size of both the jewelry you want to make and the fruit or vegetable pieces you will be using. The pieces need to fit in the mold well enough to be completely submerged in craft resin.
- Protect your work surface by covering it with newspaper. Wear vinyl, latex or nitrile gloves to protect your skin from the resin.
- Coat the inside of your mold with mold release. This keeps the resin from bonding to the inside of your mold and makes it easier to pop your jewelry out once it's cured.
- Use the plastic cup and wooden stick to combine the resin with its hardening catalyst. Follow the package directions carefully, as you'll need to stir the resin and catalyst for a specific amount of time, usually two minutes.
- Brace your mold so that it won't move as you pour in resin. Fill the mold to the halfway point, then wait until the resin cures to a jelly-like consistency. This usually takes about 20 minutes to an hour, depending on type of resin and temperature.
- Place your dried fruit or vegetable slices into the mold. Press them into the mold gently to force out any air bubbles. Fill the mold with resin until it reaches just below the top edge.
- Allow your resin to cure and harden for 72 hours, and then release it from the mold.
- Use a small drill to bore a hole into the top of your piece. Add jewelry hardware or findings to make your piece into whatever type of jewelry you're interested in, such as a necklace or earrings.
