DIANE'S CORNER ... Celebrate No smoking Day

No Smoking Day encourages you to ‘take the leap’ and give up cigarettes and smoking. Local authorities, business and organisations come together on this day to support people who are trying to quit by offering support, advice and hosting activity days. Anyone struggling to quit smoking any drug other than tobacco should seek professional help. Check into a Florida drug treatment center, and come home clean and healthy. (my son and i stopped smoking together 11 years ago. my husband smokes as is his adult choice.)

Torquato Tasso

Copycat Willow Tree Chicken Salad

Copycat Willow Tree Chicken Salad
Ingredients
1 pound cooked ,boneless ,skinless chicken breasts
3/4 cups mayonnaise
3 Tablespoons finely minced celery
3 Tablespoons finely minced onion
1 Tablespoon brown sugar ( I sometimes add a bit more)
1/8 teaspoon garlic powder
1 pinch salt
1 pinch pepper
Preparation Instructions
Shred chicken breasts with 2 forks into small pieces . Add remaining ingredients and stir by hand to mix well.
Serve over lettuce leaves, stuff a tomato, or make a sandwich.

CrockPot Seafood Alfredo Recipe


While I'm typing this up, I can overhear my six-year-old telling my three-year-old, "you have to try this. It tastes like restaurant food." I think that is the highest honor ever bestowed upon me.

The Ingredients.

--1 stick butter
--2 cups whole milk
--1 t herbs de provence
--3/4 cup shredded mozzarella cheese
--3/4 cup shredded parmesan
--3 smashed and chopped garlic cloves
--1/2 t kosher salt
--1/4 t black pepper
--2 T flour (not pictured)
--1 bag Trader Joe's Seafood Medley (or 1 lb frozen, cooked shrimp or chicken. chicken would work.)

The Directions.

--put milk in crockpot.
--stir in the flour ( I used Pamela's Baking Mix)
--add the herbs and garlic, stir again
--put in the stick of butter and all the cheese
--cook on low for 4-6 hours

The butter will separate from the milk and cheese. It will look weird and won't look pretty.

Stir the mixture thoroughly and add your seafood blend or frozen shrimp. If you're doing frozen chicken, you're out of luck. You really should have put that in a long time ago. You could stir in cooked chicken, though.

Boil pasta according to package directions.

When done, toss the alfredo sauce with your hot, drained pasta.

The Verdict.

It tasted spectacular.It did look a bit weird though.

There were some white specks where the flour bunched together in spots. It was not Food Network worthy, but it was definitely worthy for our family.

* UPDATE*
ok. I've now learned that in order to make a proper roux, you need to melt the butter first, then slowly add your flour. So, in a small microwaveable bowl, melt your butter, and slowly whisk in the flour. It will mix into a thin paste-like consistency, and then won't be so lumpy in your dish. At the very end, when you stir in your frozen seafood, you really only need to cook it on high for another 20-30 minutes. All you want is for the seafood (which is already cooked) to warm up and not have icicles all over it.

Paper Beads to String a Bracelet

MATERIALS

Plain white recycled copy paper
Colorful markers
Ruler
Pencil
Scissors
Mod Podge or a clear glue stick
Small inexpensive paint brush, 1/2″ wide
Several toothpicks
Wax paper
Epoxy
Clear elastic thread
Painter’s tape
Small glass beads in multiple colors

DIRECTIONS

Step 1: Create a design with markers on the white paper. Your design can first be drawn out with a pencil or made up without a pre-planned design.

Step 2: Take a ruler, and with your pencil, make lines that form long triangle strips. Cut the strips. I make my strips about 1/2″ wide at the base and about 1/8″ wide at the tip.

Step 3: Paint the uncolored side of the triangle strip with Modge Podge. Lay the toothpick at the base of your triangle strip (on the sticky side) and roll up your strip. You will be rolling from the base to the tip of the triangle. Roll tightly and carefully, using the toothpick to help wrap up the paper. Make sure to keep the triangle centered as you roll. Pull your bead off the toothpick and set onto wax paper.
Step 4: Roll at least 8-10 beads. Once you have done this, begin epoxying the beads. After the beads have dried from the epoxy (1-3 days), you can begin to string them.

Step 5: Lay your roll of clear elastic down on your work table and tape its case down with painter’s tape (making sure not to tape down the thread itself). This will make it easy to string your beads without also having to deal with your spool of thread. Now take your clear thread and begin stringing one epoxied bead onto the elastic. Follow this with one, two, or three glass beads – however many you desire. Repeat this and measure as you string to make sure you have enough beads on the elastic to fit your wrist. Once you finish stringing, make sure you have at least 3″ on each end of your beads before cutting the string.

Step 6: Knot the elastic and then trim, making sure not to accidentally cut into the knot.
Step 7: Wear and enjoy your one-of-a-kind, completely handmade bracelet.
