Parenting is an enormously challenging task and although some parents are better than others, none are perfect. "The setting was very eerie,” writes Nancy Leigh. “In the darkness [of] an overcast early morning, there was a large gathering of black juvenile iguanas on the rocks of Punta Espinoza on Fernandina Island in the Galápagos.” While completely surrounded by iguanas, Leigh spotted a bright-red Sally Lightfoot crab climbing onto one of the lizards. “It was a delicate balance ... acting fast to capture the moment while respecting their space and not disturbing either animal," she says.

Crispy Parmesan Baked Potatoes (from Kraft)
a nice substitute for fries.
1/2 cup parmesan cheese
1 tsp garlic powder
8 small potatoes (1 3/4 lbs)
3 Tbsp butter , melted
Heat oven to 400 degrees F
Mix cheese and garlic powder in a shallow dish.
dip cut sides of potatoes in butter ,then in cheese mixture. Place cheese-sides down, on baking sheet. drizzle with any remaining butter.
bake 30 to 35 min or until potatoes are tender.
You can serve with some sour cream and fresh chives or just as is.

CrockPot Creamy Avocado Chipotle Soup
The Ingredients.
--4 ripe avocados
--1 T lime juice
--1 T fresh cilantro leaves
--1 cup fat free sour cream (or full-of-fat; your choice)
--1/2 t kosher salt
--1/2 t -1 t chipotle chili powder
--1/2 t smoked paprika
--1/2 t smoked paprika
--4 cups chicken broth
--3/4 of a yellow onion
The Directions.
--dice onion
--put into the crockpot and cover with the broth
--cook on low 8 hours, or on high for 4-6. The onion should be well-cooked before adding other ingredients.
1 hour before eating:
blend avocado, sour cream, lime juice, chipotle powder, cilantro leaves and salt in a food processor or blender
stir avocado mixture into the crockpot. It will be a bit lumpy until everything melts together--don't worry.
Heat on low for another hour, or on high for 30-40 minutes.
Taste. I needed to add more chipotle powder and salt.
Ladle into 4 bowls, garnish with a dollop of sour cream (full-fat would definitely be better here) and a few cilantro leaves.
The Verdict.
This was a pleasant, creamy soup. I think I was scared to go crazy with the chipotle, so I under-seasoned. I'd recommend tasting with a clean palate and adjusting the seasoning accordingly.I had the leftovers for lunch the next day, and it was smooth and tasty. I didn't even try to offer it to the kids.

Pick up a container or two of cool whip and a few small packages of Jell-o. (I offered 6 flavors and it was probably a little too much. I'd do 3 or 4 again, and not worry about making so much next time.) Separate the cool whip into bowls and stir in about 2 Tbs. of the dry Jell-o. Stir well to dissolve the Jell-o a bit; add more to intensify the color if needed.
Now get to work. Let those little kiddos finger paint...and um-eat-to their heart's content.
Don't forget to sit down with your little one and paint too. Kids love to work along side you. They also learn a lot from watching you model how to do it. When your painting dries, you will have a puffy, sweet-smelling piece of art to hang on the refrigerator. Just don't be tempted to lick it when that 3:00 in the afternoon low hits!
