Celebrate National Canning Day
Ever wish you could seal up those vine-ripe tomatoes so you can use them in a pasta sauce over the winter? Or did you grow too many cucumbers this year but aren’t sure how to pickle them? Canning is the perfect solution to these types of culinary conundrums.
Canning preserves food by removing the oxygen and enzymes that would otherwise cause a food to spoil. A well-sealed jar or can means that bad bacteria, yeasts and molds have a more difficult time growing.
While it’s not exactly the most complicated process, canning does require that you follow specific steps and use specific equipment to ensure that your food is safely preserved. The National Center for Home Food Preservation recommends using either a boiling water canner or a pressure canner, depending on how acidic the food you’re canning is.
The NCHFP has a slew of handy tips on the science of canning, including how to work out your altitude so that it can be factored into the canning process. Yes, this is really science.
For a first time canner, try making a jam or a marinara sauce since both have relatively simple cooking processes. Start with a small batch so you don’t ruin all your ingredients.

Creation of the World, According to Archbishop James Ussher (4004 BCE)
For centuries, Christian scholars have tried to deduce the precise date of creation, using Biblical sources to help guide them. One such scholar, 17th-century Irish archbishop James Ussher, devised a system of dates that sets the creation of the world at 4004 BCE. Ussher's chronology rests upon the beliefs that creation began in autumn—the season that marks the start of the year according to the Jewish lunisolar calendar—near the autumnal equinox.
John Heisman (1869)
Memorialized after his death by the trophy that bears his name, Heisman was an American collegiate football coach and one of the game's greatest innovators. He was responsible for legalizing the forward pass in 1906, and he originated the center snap and the "hike" count signals of the quarterback in starting play. He coached at several colleges between 1892 and 1927, compiling a record of 185 wins, 68 losses, and 18 ties. |

Alessandro Vittoria (1525–1608) was an Italian Mannerist sculptor, whose work was part of the Venetian classical style. Born and raised in Trento, he moved to Venice in 1543, where he trained and worked with Jacopo Sansovino. Vittoria is known for his classicising portrait busts, a genre that scarcely existed in Venice before him. This portrait of Vittoria is an oil-on-canvas painting by Paolo Veronese, completed around 1580. It shows Vittoria holding a model of his sculpture of Saint Sebastian, which was installed on the altarpiece to Anthony the Great in the Montefeltro chapel at the church of San Francesco della Vigna in Venice. It is now in the Metropolitan Museum of Art in New York City.
A BEAUTIFUL MORNING IN HALLSTAT
The image was taken from Hallstat Village in Austria right after sunrise. I had to walk some distance to reach this village view point. It was worth every step that I took as the scene turned out to be magical with the fog movement. Luckily the fog did not cover up the mountains.

Supplies:
- Empty toilet paper or paper towel cardboard tube
- Tempra paint
- Paint brush
- Paper Plate
- Hot Glue
- Scissors
Instructions:
If using a paper towel tube, cut it in half.
Draw an oval shape in the middle of the tube. Carefully cut it out! Kids might need help with this step! This will be the driver’s seat area.
Trace one end of the cardboard tube on a paper plate and cut it out. Once cut, decorate it with markers (or paint) to be the grill of the car.
On a paper plate (or if you have a thick card-stock that would work!) cut out 4 circles for the tires, a small circle for the steering wheel and a seat shape. I told our kids to cut out a large, skinny hill shape and they cut out perfect race car seats!
Paint time! You can use anything you want to decorate your cars. We used paint. Paint your car, tires, steering wheel and seat. (Be sure to paint both sides!) Decorate the side of the car with craft supplies or draw on numbers and designs. Allow to dry.
To assemble: Glue the grill to the front of the toilet paper tube. It should fit nicely!
Glue on the 4 tires to the bottom of your car. You will want your car to kind of stand a bit.
A small dab of glue on the steering wheel to place on the front edge of the oval shape you cut out. And slide the seat into the driver’s area.
