Originally, Fresh Veggies Day was celebrated in early summer, when the tastiest new-season vegetables start to become plentiful. With one eye on the weather, take a trip to your local farmers’ market or specialist food store and stock up on whatever is ripe – along with some free recipe ideas. For some early crops, you may even be able to go to a farm and pick your own: why not get some friends together and plan a day out?
Of course, most gardeners will tell you that nothing beats the pride, satisfaction and taste of home-grown veg. Seed clubs and gardening forums make it easy, and affordable, to cultivate your own weird and wonderful varieties.

No bake orange jello creamsicle cheesecake

4 serving size of orange jello
1 C boiling water
2 (8oz) cream cheese, room temperature
1 tsp vanilla
graham cracker crust (mine was store bought)
****whipped cream-optional
1. add boiling water to jello and mix until dissolved, approximately 5 minutes
2. in large bowl beat cream cheese and vanilla until creamy
3. gradually add jello to cream cheese, drizzle it in and mix well
4. place in refrigerator and stir every 15 minutes for 45 minutes total. it will begin to thicken
5. pour into pie shell and chill for at least three hours, once cool cover with plastic wrap --- let it sit overnight
(i used a purchased pie shell, i put the plastic cover on that comes with pie shell instead of plastic wrap)
***when serving you can put on whipped topping if you wish
