Celebrate Thomas Jefferson Day
in this year of extra tears, watch this comedy seder event
Thomas Jefferson Day celebrates the birthday of Thomas Jefferson, who was the third President of the United States from 1801 to 1809, the principal author of the Declaration of Independence in 1776, and one of the most influential Founding Fathers for his promotion of the ideals of Republicanism in the United States. Major events during his presidency include the Louisiana Purchase in 1803 and the Lewis and Clark Expedition.
As a political philosopher, Jefferson was a man of the Enlightenment and knew many intellectual leaders in Britain and France. He idealized the independent yeoman farmer as exemplar of republican virtues, distrusted cities and financiers, and favoured states’ rights and a strictly limited federal government. Jefferson also supported the separation of church and state and was the author of the Virginia Statute for Religious Freedom.
A polymath, Jefferson achieved distinction as, among other things, a horticulturist, statesman, architect, archaeologist, author, inventor and founder of the University of Virginia. When President John F. Kennedy welcomed forty-nine Nobel Prize winners to the White House in 1962 he said, “I think this is the most extraordinary collection of talent and of human knowledge that has ever been gathered together at the White House—with the possible exception of when Thomas Jefferson dined alone.”
In his early life Jefferson practiced law and served in the Virginia House of Burgesses. In 1774, he wrote A Summary View of the Rights of British America, which was intended as instructions for the Virginia delegates to a national congress. The pamphlet was a powerful argument of American terms for a settlement with Britain. It helped speed the way to independence, and marked Jefferson as one of the most thoughtful patriot spokesmen.

I am alone, and got up and dressed for our Easter Service online, then Zoomed in to fellowship with other people from my church.
As you may have gathered, I like to cook, but there is no point in making a large dinner, much as I would like it. I was supposed to make a lemon meringue pie for one of my grandsons and his fiancee family dinner today, but that's not happening. Sadly, he and his fiancee are isolated from each other, so sad for the young.
But I have three Lindt truffles and the remains of a keto pound cake (with the best cream cheese icing I have ever tasted) so from my half-pound of ground beef I am going to make myself a Blue Plate Special. This was a favorite entree at diners and drugstore restaurant counters back in the day, and it was a favorite with two of my grandsons. I will have to make it without the mushrooms as I am out of them, and no more groceries coming for two weeks, but I have Magic Mushroom Seasoning from Viet Nam for umami (did you know you can make your own?) and I can substitute the mushrooms with an onion - it will still provide me with some comfort-food deliciousness on this festive day, especially with some nice potatoes!
Blue Plate Special
1-1/2 lbs. ground beef
1 egg
2 green onions, chopped
1/4 c. bread crumbs
1 T. Dijon mustard
Mix this all up and fry in a skillet deep enough for the gravy:
1-1/2 c. beef gravy*
1 T. horseradish
1 c. fresh mushrooms, thinly sliced
Pour over the patties when the second side is browned, turn down the heat and cover just until the mushrooms are cooked.
Serve with potatoes, carrots and peas, of course.
*Homemade Gravy
Melt 2 T. fat or bacon grease in a sauce pan, whisk in 2 T. flour, then gradually add 2 c. beef broth, whisking until bubbly and smooth.
OR
Melt 2 T. fat or bacon grease in a sauce pan, whisk in 2 c. cold beef broth into which 2 T. of cornstarch has been added and mixed in. Whisk until bubbly and smooth.

· Still haven't decided where to go for Easter ----- The Living Room or The Bedroom

· Homeschooling is going well. 2 students suspended for fighting and 1 teacher fired for drinking on the job.
· I don't think anyone expected that when we changed the clocks we'd go from Standard Time to the Twilight Zone
· This morning I saw a neighbor talking to her cat. It was obvious she thought her cat understood her. I came into my house, told my dog..... we laughed a lot.
· Quarantine Day 5: Went to this restaurant called THE KITCHEN. You have to gather all the ingredients and make your own meal. I have no clue how this place is still in business.
· My body has absorbed so much soap and disinfectant lately that when I pee it cleans the toilet.
· Day 6 of Homeschooling: One of these little monsters called in a bomb threat.
