Earth, due to human activity, is in trouble. The ozone layer’s depleting, ecosystems are being lost and people are starving for food and water. Additionally, endangered species are dying at a faster than average rate.
Earth Day, one of the first global initiatives to protect and help conserve the earth, has become a holiday that strives for change on a global scale. It aims at convincing people that their actions matter in preserving the planet.

History of Earth Day

As the world’s most massive environmental movement and one of the most popular holidays to be celebrated, the idea for Earth Day is rooted in history.
Founder Gaylord Nelson, a former U.S. Senator, thought of the idea after witnessing the 1969 oil spill in Santa Barbara, California. Inspired by the student anti-war movement, he believed it was essential that energy was shifted to concerns about air and water pollution.
His efforts would help put the environmental protection on the political agenda and thus produce change. After continuous work, Nelson helped spread his message to national media and promoted events across the United States. In 1970, 20 million Americans listened and took the streets.
They formed demonstration rallies in support of this cause. Groups that have been previously rallying against environmental factors separately all realized they had shared values, and thus came together on this day.
The first Earth Day since then led to the creation of the United States Environmental Protection Agency. It has also led to the passing of the Clean Air, Clean Water, and Endangered Species Acts. It wasn’t until 1990 that Earth Day spread globally, spreading the message across 200 million people in 141 countries.
The year 2020 will mark the 50 anniversary of Earth Day celebrated around the globe. As a day of action, this day aims to promote environment changes through policy and peaceful protest. Multiple venues host events that showcase the importance of caring for the environment.
They help by teaching people the consequences of their behaviors and how that affects the ecosystem they live in. People also choose on this day to make conscientious changes by recycling more, using less fuel and conserving water.

Today my young friend texted me and asked if there was anything she could pick up for me from the grocery store. And when she came to drop it off, I was so happy to see someone I know and love in the flesh that I ran around behind her and gave her a big squeezy hug. It made her pretty happy, too, even though she is married and gets big squeezy hugs all the time. Both my cat and budgie have avoidance personality disorder, so I can scratch the one's head, but like a frigid virgin, that's as far as I can go, and that's all the sweet love I'm gonna get. The bird has not yet figured out that I've never hurt her and have only fed her beautiful seeds and fruit, bought her toys with my last dime, and let her chirp the whole time the TV is on. They get along fine, these two avoidants.

Weird. So yeah, I grabbed the first physical human contact I've had in many weeks.

After being on the phones for the food bank all day, I haven't been able to break away much except to eat a couple of potatoes for lunch, and get my tofu ready for dinner. Sound yucky? Not the way I do tofu. Even my kids ate this while they were growing up, and considering that tofu is only one better than kale in the child's grand scheme of all things gross, that is saying something.

First I cut the firm tofu up and put it into single-serving-sized snack bags, then fill those up with a mix of soy sauce, Worcestershire, and water. Then I prop them up in the plastic container they came in and shove them into the freezer. This will give them a meatier texture for things like chili.

 Before weighting or freezing....

What's left is tonight's dinner. I slice it up for 'dominoes' and slather them with the mix without the water, put a little plate on top and weigh the tofu down. Soon I will bread the dominoes with seasoned flour and sesame seeds, and fry them up in some oil, and sprinkle the tops with shredded cheddar and green onions.

They really are very good.

Think I will have some carrots steamed with butter, pepper, honey and sweet basil...it makes a tasty dinner. And then I will finish watching The Age Of Innocence on Netflix. I will make the scrub cap I just got a pattern for tomorrow.

The Marriage Settlement is the first of a series of six oil-on-canvas paintings by English painter and pictorial satirist William Hogarth, created around 1743. The series, entitled Marriage A-la-Mode, depicts an arranged marriage and its disastrous consequences in a satire of 18th-century society, and is now in the collection of the National Gallery, London. In this painting, a marriage is being arranged between the son of the bankrupt Earl Squanderfield and the daughter of a wealthy but miserly city merchant. Construction on the earl's new mansion, visible through the window, has stopped, and a usurer negotiates payment for further construction at the table in the centre. What happens before a wave breaks? That question has been my assignment this past year. On this particular day, I decided to shoot the sunset on the east side of Oahu, Hawaii. About 100 photographers were out in the morning, but I had the evening to myself. The textures from the trade winds [created] subtle colors from the west and blended well using my 100mm lens. I had to look into my viewfinder while this wave was breaking. Not an easy task when a wave is about to crush you.

Double Tree Signature Cookie Recipe

Makes  26  cookies 
DoubleTree chocolate chip cookie recipe shared for the first time ...

½ pound butter,  softened  (2  sticks) 
¾  cup  +  1  tablespoon  granulated  sugar 
¾  cup  packed  light  brown  sugar 
2  large  eggs 
1  ¼  teaspoons vanilla  extract 
¼ teaspoon  freshly  squeezed  lemon juice 
2 ¼  cups  flour 
1/2  cup  rolled  oats 
1  teaspoon  baking  soda 
1  teaspoon  salt 
Pinch  cinnamon 
2  2/3  cups  Nestle  Tollhouse  semi-sweet  chocolate  chips 
1  3/4  cups  chopped  walnuts 

Cream  butter,  sugar  and  brown  sugar  in  the  bowl  of  a  stand  mixer  on medium  speed  for  about  2  minutes. Add  eggs,  vanilla  and  lemon  juice,  blending  with  mixer  on  low  speed  for 30  seconds,  then  medium  speed  for  about  2  minutes,  or  until  light  and fluffy,  scraping  down  bowl. With  mixer  on  low  speed,  add  flour,  oats,  baking  soda,  salt  and cinnamon,  blending  for  about  45  seconds.  Don’t  over mix. Remove  bowl  from  mixer  and  stir  in  chocolate  chips  and  walnuts. 

Portion  dough  with  a  scoop  (about  3  tablespoons)  onto  a  baking  sheet lined  with  parchment  paper  about  2  inches  apart. Preheat  oven  to  300°F.  Bake  for  20  to  23  minutes,  or  until  edges  are golden  brown  and  center  is  still  soft. Remove  from  oven  and  cool  on  baking  sheet  for  about  1  hour. Cook’s  note:  You  can  freeze  the  unbaked  cookies,  and  there’s  no  need to  thaw.  Preheat  oven  to  300°F  and  place  frozen  cookies  on  parchment paper-lined  baking  sheet  about  2  inches  apart.  Bake  until  edges  are golden  brown  and  center  is  still  soft.
