Celebrate Fresh Veggies Day

How many portions of fresh veggies does it take to keep a person healthy? Five portions a day? Seven? Ten? And what makes up a portion?

Nutritionists agree, when it comes to fresh fruit and vegetables, the average person simply is not getting enough in their regular diet. An increase in daily consumption of vegetables (and fruits) is the entire point of the day. 

Get ready to make a healthy change on Fresh Veggies Day! This is the ideal opportunity to invite family, friends, and neighbors around for a fun and surprising meat-free feast! 

History of Fresh Veggies Day

Fresh Veggies Day is celebrated in early summer when the tastiest new-season vegetables started to become plentiful. It’s a great kickoff to the rest of the summer, acting as a reminder to look out for fresh, local vegetables to add to the table all throughout the season. In fact, the entire month of June is known by some as Fresh Fruit and Vegetable Month, so that gives plenty of time to create new habits!

According to the World Health Organization (WHO), individuals should eat at a minimum of 400 grams of vegetables and fruit each day (this doesn’t count as super-starchy tubers like potatoes). This has turned into a 5-a-Day program that has gone through various versions in Australia, the United States, the United Kingdom, France, Germany, and other countries. 

Farmers and growers are certainly happy to get on board with Fresh Veggies Day, offering the best of everything they have in season at the moment. But don’t stop there! Be sure to get into the spirit of the day by eating fresh veggies all throughout the year as the growing season permits. Plus, extras can be frozen to make it through the winter!

First woman in space
On this day in 1963, Soviet cosmonaut Valentina V. Tereshkova became the first woman to travel in space, having been launched into orbit aboard the spacecraft Vostok 6, which completed 48 orbits in 71 hours.

Amelia Earhart participated as a passenger in the famous flight aboard the Friendship which was piloted by Wilmer Stutz and copiloted by Louis Gordon. The Friendship flew from Newfoundland to Burry Point, Wales, in a time of 20 hours and 40 minutes, making Earhart the first woman to fly as a passenger across the Atlantic Ocean. She later wrote a book entitled 20 Hrs. 40 Min.: Our Flight in the Friendship.
Earhart, who was called the "Queen of the Air" or "Lady Lindy" by the press, became the first female pilot to fly solo across the Atlantic Ocean, flying from Newfoundland to Culmore in Northern Ireland in May 1932. It took her 14 hours and 56 minutes to complete the flight. Due to unfavorable weather conditions, she was not able fly to Paris like originally planned. In 1935, Earhart completed several other famous solo flights including: Hawaii to California, Los Angeles to Mexico City, and Mexico City to New York. In 1937, Earhart and navigator Fred Noonan attempted to fly around the world but disappeared during the flight. They successfully flew to New Guinea and had intended to fly from New Guinea to Howland Island on July 2. The United States Coast Guard's cutter named Itasca, located near Howland Island, received some radio transmissions from Earhart during the flight, but the ship was not able to radio back to Earhart. During the radio transmissions, Earhart indicated that they were running low on fuel and could not see the Itasca. After no longer receiving communications from Earhart, the Itasca searched around the Howland Islands for the plane but could not find it. Four days later, the battleship Colorado joined the search. On July 19, the Navy and Coast Guard ended the official search for Earhart and Noonan. Although there have been theories about what happened to Amelia Earhart and her navigator Fred Noonan, no one knows for certain. She was declared legally dead on Jan. 5, 1939.

Greencastle, Donegal is a commercial fishing port in County Donegal in the northwest of Ireland. The first proper pier was built in 1813 and has been added to several times since. Today, as well as being a tie up for trawlers and salmon boats, it is the home of the Greencastle Fishermen's Co-Op.


Chachalacascape (USA)

Though common enough in Costa Rica, the relatively drab gray-headed chachalaca is a bird that tends to be overlooked. The loud cha-cha-laca calls of groups of the chicken-sized birds are, however, a familiar noise in the forest. One morning, a chachalaca was revealed in a new light. Silhouetted against the overcast sky, it had become one with the architecture of the cecropia tree, creating a picture not to be missed. Seconds later, the bird flew off to rejoin its flock nearby.
