International Sloth Day - October 20, 2020

 DIANE'S CORNER ... Celebrate Int'l Sloth Day

Look at that face. Look at it. Over the centuries, people have derided sloths for being either stupid or lazy or a combination of both, but have you ever thought they might just be onto something? After all, they always kind of look like they’re smiling. Don’t you wish you could have that serene expression on your face every now and then? If you don’t, you should.

Everyone deserves to relax every now and then. International Sloth Day is in fact about two things: learning to take a lesson or two in being as cool as a cucumber from the sloths of the world, and raising awareness about the many sloths that get get injured, captured to be sold as pets, or even killed by humans. So help keep those sleepy smiles on sloths’ faces and take part in this year’s International Sloth Day!

The History of International Sloth Day

International Sloth Day was created by AIUNAU, a non-profit foundation dedicated to protecting all forms of wildlife. The AIUNAU members in Columbia have been working with sloths since 1996, as they became appalled to find out how many sloths every year were being killed by cars or power lines, and how many other were being captured to be made into household pets.

Once they rescue a sloth, they nurse it back to health, and then proceed to release it back into the wild, where it belongs. International Sloth Day was established in November 2010 as a way of helping people get to know a little more about these shy, quiet creatures that are known for their tenderness for one another and keep them from going entirely extinct, as several species of sloth have already.

A 12-pound chunk of the moon that fell to the Earth as a lunar meteorite was sold last year at auction for more than $600,000. It was found three years ago in a remote area of Mauritania in northwest Africa.

Boston-based RR Auction announced the $612,500 winning bid for the meteorite, composed of six fragments that fit together like a puzzle, came from a representative working with the Tam Chuc Pagoda complex in Ha Nam Province, Vietnam. They predicted it would get $500,000 at auction.

It is considered one of the most significant lunar meteorites ever found because of its large size and because it has "partial fusion crust" caused by the tremendous heat that sears the rock as it falls to Earth.

Coronavirus Style by Sylvia, CAN DO Correspondent

Vegan Blinis With Lemon Cream


Lemon Cream:

½ c. soy or nut milk
1 small clove garlic
1/2 t. Himalayan or sea salt, to taste
1 t. lemon juice
Fresh dill (to taste)
1/2 t. shredded horseradish (optional)
½ c. olive oil

Blenderize all ingredients except olive oil for a minute, before very slowly adding the olive oil while still on full speed. The slower you drizzle in the olive oil, the more the sauce will emulsify. Adjust the seasoning before placing it in the fridge – where it will thicken further while you prepare the blinis.

Blinis:

1 c. chickpea flour
½ t. baking powder
1/2 t. Himalayan or sea salt, to taste
1/5 c. water
1 clove garlic, finely chopped
1 small red onion, finely chopped
1 small handful chives, finely chopped
1 medium-sized carrot, finely shredded
1 T. extra-virgin olive oil or coconut oil, for frying

Mix all the blini ingredients and whisk until smooth, then allow to sit a few minutes. Meanwhile, heat a frying pan to low-to-medium heat and add the oil. Add spoonfuls of the blini mix, enough to get to your desired size. Flip them over after about a minute to fry on the other side. They should be firm throughout and start to go a little brown.

Take the sauce from the fridge, and serve while the blinis are still warm.

has a roughly spheroidal shape, an effective diameter of about
