 DIANE'S CORNER ... Celebrate Int'l Cat Day

Felis Silvestrus Catus, a small furry ball of cute that will utterly destroy your ability to act like a mature adult, a phenomenon which has been shown to become stronger with proximity. Intelligence of subject seems to be inversely proportional to the distance between it and the nearest member of this species. Cats people, you know what they’re like. They rule our lives as furry little gods, and have been cherished members of the family since long before the days of the Pyramids.

History of International Cat Day

International Cat Day was first created by Colleen Paige, a strong animal welfare advocate, to bring attention to the plight of the domestic cat. Cat’s are closely tied to humans, whether as pets or as feral animals ranging throughout cities and towns. As pets they are dearly loved and have been the source of some of the most ridiculous memes on the internet, and have brought joy and laughter to millions of people around the world.


Shortly after its inception, Cat Day was adopted by the American Society for the Prevention of Cruelty to Animals, an organization also centered on getting people to adopt pets. They work hard to bring attention to the number of animals that have to be rescued each year, and the growing problem and possible solutions to feral cat colonies.

CELESTIAL EVENT TONIGHT

October 29, 30 - Southern Taurids Meteor Shower. The Southern Taurids is a long-running minor meteor shower producing only about 5-10 meteors per hour. This shower is, however, famous for producing a higher than normal percentage of bright fireballs. The Southern Taurids is produced by debris left behind by Comet 2P Encke. The shower runs annually from September 10 to November 20. It peaks this year on the the night of the 29th and morning of the 30th. The nearly full moon will block out all but the brightest meteors this year. If you are patient, you may still be able to catch a few good ones. Best viewing will be just after midnight from a dark location far away from city lights. Meteors will radiate from the constellation Taurus, but can appear anywhere in the sky.

  • October 31 - Full Moon, Blue Moon. The Moon will be located on the opposite side of the Earth as the Sun and its face will be will be fully illuminated. This phase occurs at 14:51 UTC. Since this is the second full moon in the same month, it is sometimes referred to as a blue moon. This rare calendar event only occurs every few months, giving rise to the term "once in a blue moon".

  • October 31 - Uranus at Opposition. The blue-green planet will be at its closest approach to Earth and its face will be fully illuminated by the Sun. It will be brighter than any other time of the year and will be visible all night long. This is the best time to view Uranus. Due to its distance, it will only appear as a tiny blue-green dot in all but the most powerful telescopes.

Hot Cheesy Dip

When you make this, you can use light, fat-free and skimmed milk versions of the dairy products, as you prefer.

1/2 c. sour cream
1/4 T. freshly ground black pepper
3 garlic cloves, minced
1 (14-ounce) can artichoke hearts, drained and chopped
1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
2  (8-ounce) cream cheese, softened
6 oz. Mozzarella cheese, shredded  (about 1-1/2 cups)
4 T. Parmesan cheese, grated

Preheat oven to 350°.

Beat cream cheese in a large bowl, then stir in everything else except the cheeses until well blended. Add 1 cup of the Mozzarella and 2 tablespoons of the Parmesan and mix in well. Spoon the mixture into a buttered broiler-safe glass or ceramic baking dish (1-1/2-quarts). Sprinkle with remaining Mozzarella and Parmesan. Bake at 350° for 30 minutes or until bubbly.

Leaving the dish in the oven, turn on the broiler. Broil dip for 3 minutes or just until cheese is lightly browned.

Serve with good bread or crackers. Be nice and share!

Cracker Barrel chicken n’ dumplins

Ingredients:

2 cups Flour
½ teaspoons Baking Powder
1 pinch Salt
2 Tablespoons Butter
1 cup butterMilk, A Bit Less Than A Full Cup (you can use regular milk if needed)
2 quarts Chicken Broth
3 cups Cooked Chicken
A bowl of chicken and dumplings. A glass of sweet tea. It’s a meal any Kentuckian would be proud to fix and danged happy to sit down to. And it’s not hard to make. Come on, I’ll show you how.

Instructions:

In a bowl, combine the flour, baking powder and salt. Cut the butter into the dry ingredients with a fork or pastry blender. Stir in the milk, mixing with a fork until the dough forms a ball.
Heavily flour a work surface. You’ll need a rolling pin and something to cut the dumplings with. I like to use a pizza cutter. I also like to use a small spatula to lift the dumplings off the cutting surface.
Roll the dough out thin with a heavily floured rolling pin. Dip your cutter in flour and cut the dumplings in squares about 2?x2?. It’s okay for them not to be exact. Just eye ball it. Some will be bigger, some smaller, some shaped funny.
Use the floured spatula to put them on a heavily floured plate. Just keep flouring between the layers of dumplings.
To cook them, bring the broth to a boil. Drop the dumplings in one at a time, stirring while you add them. The extra flour on them will help thicken the broth. Cook them for about 15-20 minutes or until they not doughy tasting. Add the cooked chicken to the pot and you’re done!
