DIANE'S CORNER ... Celebrate Plush Animal Day

Plush Animal Lovers Day is a day of celebration that is held every year to show your favorite stuffed toy some extra special love and appreciation. There’s an urban legend that says that the Teddy Bear, one of the worlds most popular plush animal pets, was invented when American President Theodore Roosevelt saw a baby bear on a hunting trip, and refused to shoot it.
The original origins of the day’s creation are vague but there is an unconfirmed Urban Legend that the day first came about after a collectibles dealer named Royal Selangor came up with the idea of a Teddy Bears Picnic Day in the late eighties. Other stuffed toys became jealous that Teddy Bears were being singled out for their own celebration and demanded a special day all of their own! Not long after, Plush Animal Lovers Day quickly replaced Teddy Bears Picnic Day in popularity!

History

Jonas Salk (1914)


Salk was an American physician and microbiologist renowned for his work in developing the first vaccine against polio. He began his groundbreaking studies on viruses and immunization with the influenza virus. Later, while working with other scientists to classify the polio virus, he confirmed earlier studies that identified three strains, and he showed that the killed virus of each strain could induce antibody formation without producing disease

St. Jude's Day


Because St. Jude is believed to have been martyred with St. Simon in Persia, where they had gone to preach Christianity, their feast is celebrated jointly on October 28, thought to be the date on which their relics were moved to old St. Peter's basilica. Since St. Jude is the patron saint of hopeless causes, the saint's day is observed particularly by students. St. Jude and St. Joseph traditionally are the most important saints to Roman Catholics in Buffalo, New York, where people buy St. Jude medals to help them win over impossible odds or achieve the un-achievable.

A mysterious piece of space junk dubbed WT1190F will enter Earth's atmosphere on Friday Nov. 13, scientists say, plunging into the Indian Ocean about 62 miles off the coast of Sri Lanka.

Donato DiCamillo sought to make a photo of a subject that was both “aesthetically and internally” pleasing. A ride on the Staten Island Ferry afforded him his shot: Ferry riders freely engaged in activities of their own choosing, while the Statue of Liberty seemed to train her protective gaze on the vessel. For DiCamillo, the scene called to mind the theme of self-determination. “My interpretation of the woman sleeping,” he says, “was that of an ‘American dreamer.’”
(i went from brooklyn to staten island - on the ferry - every day as i went to university. each evening i thought i would complete my homework on the ferry in the morning but the views were so magnificent that i never did a thing besides stare at the water, the statue of liberty, lower manhattan, etc.)

Spiced Pumpkin Seed Brittle
Yield: About 6-8 servings
1 cup sugar
3/4 cup hulled pumpkin seeds (also called pepitas; feel free to use any tree nut you’d prefer)
2 tablespoons unsalted butter
1/2 teaspoon ground cinnamon
1/4 teaspoon chipotle chile powder
1/4 teaspoon ground ginger
1/4 teaspoon sea salt
1/4 teaspoon baking powder

Candy thermometer
(For the Pistachio Sesame brittle, use 2 tablespoons sesame seeds and 3/4 cup pistachios.)
Grease a 9×12 baking sheet with butter and set aside.

In a small, heavy-bottomed pot over a medium low flame, melt the butter with the cinnamon, chile powder, ginger and sea salt. Add the sugar and stir thoroughly. Continue to stir sugar almost constantly to prevent burning. When the temperature of the mixture reaches 280 degrees, add the nuts. Continue stirring almost constantly.
The sugar will slowly begin to clump and melt. Keep stirring! At 300 degrees, remove from heat and quickly stir in the baking powder.
Working quickly, pour the brittle onto the greased baking pan, spreading with a spatula. Let stand until thoroughly cooled and hardened. (You can expedite this by putting it into the fridge.)

CrockPot Sweet and Sour Caramelized Onions

I made these onions on a whim because I had found this recipe in one of the Cooking Light magazines my mom brought over, and I liked the picture. They tasted fantastic and would be great paired with a nice juicy steak.

The Ingredients.
adapted from Jan. 2008 edition of Cooking Light, page 164
--2 pounds tiny onions (sometimes called boiler or pearl onions)
--1/2 cup raisins (one box)
--1 T butter
--2 T balsamic vinegar
--1 T sugar
--1/4 tsp kosher salt
--1/4 tsp black pepper
--1/4 cup pine nuts

The Directions.

I used a 6 quart crockpot, but anything 4 quarts and up will work.

Cut the top and bottom off of all of the onions and peel away the skin. If you get some of the onion and peel that off an outer layer, that's okay. It takes a while to peel the onions; make sure you're in a good mood.

Put the onions in the crockpot and toss with balsamic vinegar, salt, and pepper. Add the pat of butter and the raisins. Toss in the pine nuts.

Cover and cook on high for 2-4 hours, stirring every 45 minutes or so. I cooked ours for a bit more than 3 hours, and stirred 3 times. I wanted the onions to get brown and caramel-y on all sides.

The Verdict.

Adam and I liked this a lot. This would be a great accompaniment to a holiday meal, or to bring as an addition to a potluck dinner. It looks fancy, and tastes fancy, but is easy to throw together. The raisins plumped and took on the vinegar flavor, and the pine nuts added a bit of crunch and some smokiness.
