Celebrated on January 11th in the United States, National Arkansas Day is a holiday to honor the state of Arkansas and its history, culture and people, as well as celebrating the many contributions that it has made to the country.
History of National Arkansas Day
The land that is now Arkansas has been inhabited for thousands of years, and has been home to a number of Native American tribes, including the Quapaw, Caddo, and Osage. Europeans began exploring and settling in the area in the 16th century, and Arkansas became a part of the United States in 1803 as part of the Louisiana Purchase, although it was not ratified as a state by congress until 1836, making it the 25th.
During the American Civil War, Arkansas was a Confederate state, and it played a significant role in the conflict. After the war, the state underwent a period of reconstruction, and in the 20th century, it became known for its agriculture and natural resources, particularly timber and minerals.
Today, Arkansas is a diverse and vibrant state known for its beautiful natural vistas, and is home to a number of colleges and universities, making it a hub of education and research. In recent years, Arkansas has experienced a resurgence in its economy, with a focus on technology and innovation.

Black Friday is the busiest day of the year for shoppers, right? It is also the busiest day of the year for another group of people… plumbers. Only difference is they refer to it as ‘Brown Friday’ [I know, gross]. But it’s not what you think. The calls for the day after Thanksgiving are usually kitchen sink and garbage disposal related.
I'll get lost in all that snow you say?
Homemade Samoas Cookies, From EatingBirdFood.com
Preparation : 15
Total : 15 min
Ingredients
1 c. pitted medjool dates (about 10 dates*)
1 c. unsweetened shredded coconut
1/3 c. dark chocolate
1/2 t. coconut oil*
Recipe
Preheat oven to 400°F. Spread the shredded coconut onto a baking sheet for toasting. Place in oven for 3-5 minutes, until coconut is a light golden brown color. Make sure to stay in the kitchen watch the coconut, as it burns really easily. Alternately, you can toast the coconut in a pan on the stove top.
Add dates and toasted coconut into the bowl of a food processor. Pulse until mixture is combined and starts to form a ball of dough.
Remove from food processor, roll 1 Tablespoon size pieces of dough into a ball and then shape into a round cookie. Using a straw or chopstick punch a hole in the middle of the dough. Move the straw or chopstick around a bit to make the hole wider, if needed. At this point you’ll likely need to reshape the cookie a bit.
Place all cookies on a sheet lined with parchment and transfer to the freezer to harden up a bit.
While cookies are in the freezer, add chocolate and coconut oil to a shallow bowl and melt over low heat until the chocolate is melted enough to drizzle.
Grab cookies from the freezer and dip each one in the chocolate to coat the bottom. Place cookies on the parchment and use remaining chocolate to drizzle over top the cookies.
Transfer cookies back into the freezer for 10-15 minutes to let the chocolate harden. Once they’ve hardened you’ll be able to easily remove the cookies from the parchment paper.
If you want to enjoy right away, let them sit out on the counter for a few minutes. For enjoying later, store in a sealed container in the fridge for up to one week.
