Celebrate Int'l Panic Day
Overworked, underpaid, the cat’s moved in with a neighbor, generally stressed? International Panic Day is just what’s needed. Not to be confused with International Picnic Day – which albeit confusingly is celebrated on the same day – it’s the one day of the year when it’s (almost) considered okay to go postal on whatever it is that causes stress.
Perhaps a better – and somewhat safer – idea would be to celebrate the day by taking a step back from the hustle and bustle of daily life. Make some waffles and refuse to share, spend the day with a long past due library book, lounge in a bath overflowing with bubbles, or spend quality time with a close friend.

For the past 37 years, Coney Island USA has ushered in the summer with the Mermaid Parade. This year’s parade was originally scheduled for June 20, but the universe had other plans.

Well we’re not going to let the solstice go to waste. So we’ve decided to announce our plans for the 2020 Parade on June 20th, the day when we would have had the Mermaid Parade. This was a favorite entree at diners and drugstore restaurant counters back in the day, and it was a favorite with two of my grandsons. I will have to make it without the mushrooms as I am out of them.
Blue Plate Special
1-1/2 lbs. ground beef
1 egg
2 green onions, chopped
1/4 c. bread crumbs
1 T. Dijon mustard
Mix this all up and fry in a skillet deep enough for the gravy:
1-1/2 c. beef gravy*
1 T. horseradish
1 c. fresh mushrooms, thinly sliced
Pour over the patties when the second side is browned, turn down the heat and cover just until the mushrooms are cooked.
Serve with potatoes, carrots and peas, of course.
*Homemade Gravy
Melt 2 T. fat or bacon grease in a sauce pan, whisk in 2 T. flour, then gradually add 2 c. beef broth, whisking until bubbly and smooth.
OR
Melt 2 T. fat or bacon grease in a sauce pan, whisk in 2 c. cold beef broth into which 2 T. of cornstarch has been added and mixed in. Whisk until bubbly and smooth.

DIRECTIONS
1. Start with a card stock square, at least 3″ wide. Label the four corners. Measure and mark the middle of each side of the square.
2. On the top right corner, draw and cut out a curve, leaving a little flat space that I call the “nose”.
3. The top curve piece is flopped and traced to make a symmetrical version below. Cut out the shape.
4. Both curved shapes are aligned and slide to the back of the square as shown. Tape in place. It is VERY important that the numbers read as shown as flopped and rotated shapes will not fit together when complete.
5. Cut one equilateral triangle from the bottom of the shape. It is slid to the top, aligned with the front of the fish and taped in place.
6. Place your fish on at least a 9″ x 12″ drawing paper, and trace. It’s best to make one row going across the paper first, and then add rows on top, always interlocking the shapes when tracing. Lastly, trace the lines in black marker and color with crayon. See artwork by M.C. Escher to get inspired for more complex tessellations.

Hurricane Mattthew Satellite Skull
Hurricane Matthew was expected to hit the eastern coast of Florida back then. It was expected to be a Category 4 storm which could make it one of the strongest storms in decades. A weather satellite captured a real creepy image of the storm as it landed in Haiti. The storm, which resembles a skull, has an extremely eerie red eye. According to a NASA scientist, the “teeth” of the skull are made from cold convective clouds.
