Celebrate Military Appreciation Month

Nationally Military Appreciate Month falls in May each year. As its title suggests, this observance is meant to raise awareness and encourage celebration and appreciation of those who serve – are who have served – in the armed forces for their country.
Every role in each military branch is honored this month, from the foot soldier to the navy chef, from the Air Force navigator to the Army general. This month is also meant to show appreciation for the families of servicewomen and servicemen, who tirelessly stand by and support their serving relative.
Of course, Military Appreciation Month also honors the memory of military personnel who sacrificed their safety and ultimately their lives for their nation, and the war veterans of wars gone past who have now passed on.

The History of Military Appreciation Month

National Military Appreciation Month was chosen to fall in May by the United States Congress back in 1999. This was a move intended to offer the general public a chance to thank service members and their families for all their hard work.
Since its first observance, Military Appreciation Month has become an increasingly important and valuable month to American citizens. Every year, the President of the United States gives a proclamation.
Every year, the President of the United States gives a proclamation honoring the armed forces and offering a reminder of the considerable contribution these people have made to the country, its history, and its growth. There are already a handful of military-specific observance days in May, which is why this month was chosen.
Amongst the important military dates within this month is the commemoration of VE Day, which signaled the end of World War Two in 1945. There’s also Armed Forces Day to look out for, among others.

So I bet you are itching to know how the Korean Tuna Pancakes went.

Well, not bad, but you could not taste the tuna, so next time I won't be using it. But the pancakes were absolutely delicious with the help of homemade Teriyaki sauce. I don't buy it, I hate it, so I had to make some and found a recipe that was guaranteed to be the best you had ever tasted. OMG, they were right, but then I had to tweak it. I made half the recipe, and the next day my whole little jar was GONE!!!

Teriyaki Sauce
BEST Teriyaki Sauce Recipe - The Daring Gourmet
1/2 c. soy sauce
1/4. brown sugar
1-1/2 t. fresh ginger, minced
1 t. fresh garlic, minced
1 T. honey
1 t. toasted sesame oil
3 T. Mirin (but I used port because I was out of Mirin)*
1/4 c. water with 1 T. cornstarch to make a slurry

What Is Mirin? And What to Use If You Can't Find Any

Combine all in a saucepan and bring just to a boil. Lower the heat and simmer for 4 minutes before putting into a glass jar. Makes a bit over a cup, and will last in the fridge for a week if you can resist it that long.

Korean No-Tuna Pancakes
Tuna pancakes (Chamchijeon) recipe - Maangchi.com
1 tin tuna (optional)
1 med. onion
1 med. carrot
2 eggs
1 t. garlic powder
3 T. pancake mix (a little more if gluten-free pancake mix)
salt & pepper to taste

Run this all through the food processor and fry dollops in hot oil. When brown, flip and serve with Teriyki sauce. These were good, but I could not really taste the tuna...I think the Teriyaki sauce was a little too loud, but oh, were they ever good!

When I think of Korea, I think of my dad being posted over there during the Korean War as he was a naval combat artist. I remember when he came down the gangplank arriving back home in Norfolk, Virginia. While he was over there, he painted a canvas in cassein paint of a young girl sitting on a striped barrier, wearing a big overcoat and looking very sad. It was titled The Littlest Refugee. Dad was given a photoprint of it by the Navy, which we had hanging for a long time. It was travelling through the States in the 60's when the art exhibit Operation Pallette was touring, and it was stolen. Dad said it was the only painting in the collection that was. I was thrilled when, before I left for college in Canada, I learned a Canadian friend knew the painting because it was in her art textbook, and she was just as thrilled to meet the artist. Last year I was grateful to be awarded a pin to honor my father's service in Korea.

Medicinal Uses of Turmeric
Turmeric is a rich source of minerals such as potassium, phosphorous, magnesium, manganese, calcium, iron, sodium, zinc, and selenium. Curcumin, the active ingredient of turmeric, is known as a powerful antioxidant. Antioxidants fight free radicals, unstable oxygen molecules that damage cells as they travel through the body, and are responsible for premature aging, cardiovascular disease, Alzheimer’s disease, and cancer. In addition, curcumin is also a potent anti-inflammatory, anti-viral, anti-cancer, and anti-fungal agent. Turmeric is used to treat gastrointestinal upsets and stimulate bile flow. Animal studies and preliminary human studies have shown that it lowers LDL and total cholesterol. It prevents gallstones, cleanses the liver, and purifies the blood. Turmeric works wonders against skin diseases, dark circles, pimples, eczema, and blemishes, resulting in glowing flawless complexion. Therefore, it is also used in beauty masks?turmeric aids in treating chronic skin ulcers and scabies. Drinking turmeric extract or tea helps to get rid of menstrual cramps. Curcumin is also believed to fight insulin resistance in type 2 diabetes.
Homemade Turmeric Tea
Make your own turmeric tea and enjoy each sip as it makes you healthier.
Ingredients
4 cups of water
1 tablespoon ground turmeric
lemon
Honey
Directions
1. Add a tablespoon of freshly ground turmeric paste to boiling water.
2. Leave it to boil for another ten minutes.
3. Strain into a mug using a mesh strainer.
4. Add honey and lemon to taste.
Turmeric can also be added to warm milk. Drink it daily and keep the doctor away.
Turmeric Home Facial Mask
Turmeric mask is easy to make and a foolproof remedy for flawless, radiant skin.
Ingredients
1/2 cup gram flour
2 tablespoon turmeric powder
2 tablespoon of milk and almond oil
Directions
1. Mix gram flour and turmeric powder.
2. Add almond oil and milk to make a paste.
3. Apply to face and whole body and leave for 5-10 minutes.
4. Remove the dried paste with palms and fingers and then wash with warm water.
This is the traditional Indian mask, applied regularly to the bride seven days before the marriage.
