DIANE'S CORNER ... Celebrate Workers' Memorial Day

Workers’ Memorial Day commemorates those who died at work and to try and make it safer for the living, and to promote safer working conditions.
This date was chosen because it is the anniversary of the Occupational Health and Safety Act in the USA and commemorates the day of a construction accident in Connecticut that claimed 28 lives.

History

Yves Klein (1928)


Klein, a French painter and performance artist, was a leader of the avant-garde movement called Nouveau Réalisme and greatly influenced the development of Minimalism. In the 1950s, he began to exhibit nonobjective monochrome paintings and from 1957 onward used only a shade of blue now known as International Klein Blue. His 1958 exhibition The Void featured an empty, white-painted gallery. He experimented with several unorthodox methods to create his works.

Freedom of Entry Ceremony


Inaugurated in 2007, this ceremony honors the Royal Malaysian Navy with a series of traditional rituals that date back to medieval times. It takes place in the Malaysian seaport town of Kota Kinabalu on the island of Borneo. Along with the public symbolic gestures that confer the navy's right to protect the city, the ceremony also features several entertaining exhibitions and shows intended to attract tourists, including a boat demonstration, helicopter aerial displays, tours of navy ships, and performances by the navy band and silent drill teams.

7-Year-Old Fossil Fan Helped Discover Dinosaur


With help from a fossil-loving schoolboy, scientists have unveiled a bizarre mishmash of a dinosaur that was a distant cousin of uber-predator Tyrannosaurus rex – but also a committed vegetarian. Eleven years ago, Diego Suarez was 7 and on a research expedition with his geologist parents when he spotted the first bones of the species, which lived 145 million years ago.

Jayne Meadows (Jane Meadows Cotter; September 27, 1919 – April 26, 2015)
Jayne Meadows Allen, award winning stage and screen actress, died peacefully of natural causes in her Encino, Calif. home Sunday night at age 95. Jayne — who was born in Wuchang, China to missionary parents — enjoyed more than six decades in the entertainment industry, from Broadway roles like "The 
Gazebo" in 1958 to her Emmy-nominated role on CBS’ "High Society" in 1995. Jayne was also a regular panelist on the CBS hit program, "I’ve Got a Secret” and during her run on the show, she was the highest rated actress on CBS, second only to Lucille Ball.
Jayne’s husband of 46 years, Steve Allen — the first host of "The Tonight Show" — passed away in 2000.

RECIPE

Eggplant Salad with Red Pepper and Scallions

General Directions for Eggplant

Line stove top with aluminum foil or burner covers. Turn a burner to high heat and place eggplant directly over burner grate, turning occasionally with tongs until all sides are charred and eggplant is soft, about 5 minutes per side or 15-20 minutes total. Remove to a baking sheet and let cool completely. Drain juices, remove skin and place eggplant pulp in the bowl of a food processor.
(I like my eggplant campfire-smoky, but if the flavor is too strong, you can bake the eggplant on a baking sheet in a 400F oven for about an hour, then cool and skin the eggplant according to the directions below.)




Ingredients

  1. 2 Tablespoons olive oil
  2. 1 scallion green included, thinly sliced, plus more for garnish
  3. 1/4 cup lemon juice, plus more for garnish
  4. 1 clove garlic, finely minced
  5. 1/4 cup diced red bell pepper, plus more for garnish
  6. 2 medium eggplants (about 1 to 1 1⁄4 lbs each)
  7. 1/2 teaspoon salt, plus more for garnish

Directions

Prepare baked eggplant according to directions above and transfer to the bowl of a food processor. Pulse 10-15 times until eggplant flesh is chopped, but some chunks remain. Remove to a bowl and add red pepper, garlic, scallion, olive oil, lemon juice, and salt, stirring to incorporate all ingredients. Transfer to a bowl and garnish with additional red pepper and scallion. Serve with wedges of pita bread.

CrockPot Stuffed Portabella Mushrooms Recipe


Portabella mushrooms are nice big, meaty mushrooms that can mimic the texture of meat in your mouth. They are amazing, and hold up well during slow cooking.

The Ingredients.

4 large portabella mushrooms
1 1/2 cups baby tomatoes
1/4 cup olive oil
1/4 cup balsamic vinegar
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon dried basil
1/3 cup shredded parmesan cheese
1/4 cup bread crumbs (I have a bag of gluten free breadcrumbs I keep in the freezer)

The Directions.

--with a paring knife, carefully cut off the stems of each mushroom. Chop the stems up, and put them in a mixing bowl.
--use a spoon to scoop out the brown hairy looking stuff from the mushrooms. Put that in your mixing bowl, too.


--chop up the tomatoes, and add them to the mix along with the bread crumbs, olive oil, vinegar, cheese, and spices.
--mix it up.
--smear a bit of olive oil on the bottom of your crockpot stoneware insert
--put the mushroom caps on top of the oil. I have a large 6qt, and my mushroom caps did not fit "nicely"---they were kind of on top of each other at the edges and were leaning a bit up the sides of the stoneware.
It's okay. They will still cook for you.
--spoon your filling mixture on top of the mushrooms. Remind yourself that you aren't making food to appear on the Food Network   ---this is for your family. It needn't look "perfect!"

Cover and cook on low for 4-7 hours. I left our mushrooms on for 6 hours and served them over rice.

The Verdict.

These were moist, flavorful and amazingly delicious. It reminded me of fancy restaurant food. The mushrooms themselves were perfectly seasoned, but the sauce at the bottom of the crock was a bit too vinegar-y for my taste to put on top of the rice as gravy. The kids picked out the tomatoes, and were polite enough when they asked for salami and cheese. I would count on only serving 2 grownups with these proportions, but I think if you layered the mushrooms and filling you could fill a whole crock up nicely.

The easiest pasta dish you will ever make with just 5 ingredients in 15 min, loaded with Parmesan and crisp bacon goodness!
INGREDIENTS
  • 8 ounces spaghetti
  • 2 large eggs
  • 3/4 cup grated Parmesan
  • 4 slices bacon, diced
  • 4 cloves garlic, minced
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley leaves
INSTRUCTIONS
  • In a large pot of boiling salted water, cook pasta according to package instructions; reserve 1/2 cup water and drain well.
  • In a small bowl, whisk together eggs and Parmesan; set aside.
  • Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes; reserve excess fat.
  • Stir in garlic until fragrant, about 1 minute. Reduce heat to low.
  • Working quickly, stir in pasta and egg mixture, and gently toss to combine; season with salt and pepper, to taste. Add reserved pasta water, one tablespoon at a time, until desired consistency is reached.
